I've used this type for years and during a recent move it's missing. So I needed another one. It makes quick work of rolling out pizza dough and to me, so much easier than using a traditional rolling pin. I was very surprized to get the Pastry Pizza roller, I did not expected to be so BIG, it is about 9 inches in length and very well build and heavy, not a little squiggle thing at all. All the wood parts are held together by a very strong metal frameI do not have any problems with the wood finish on the rollers, mine are fairly smooth, in fact I would not wanted any smoother, I want the rollers to absorb the oil from the Pizza or what ever it is I am using it for, so they can aged and become seasoned. Besides you have to lightly flour the rollers sometimes depends on the dough you working with, my Pizza dough is very oily so I have no sticky problemsNow I can flatten Pizza dough in seconds instead of using my hands and fingers, well, I still use my hands a little to make the round edge of the Pizza, it works great and makes my work a lot easier and go a lot faster to make Pizza for the whole Family. On the back of the card board of the item there is a nice Whole Wheat Pizza Dough Recipe. I wish I could give it more than 5 stars, I ordered on a tuesday and arrived two days later friday, super fast! I am glad I got this Gadget. ...Thank You D.D.I make a pizza only once a month or so, but this helps a lot. Although the construction quality was adequate on receipt, I gave it a light sanding and olive-oiling just for good measure. (Then washed off the olive oil.) I hand wash it with soap after every use, and have had no degradation of the wood. My only reservation involves the concept of rolling a pizza dough. Depending on your pan, dough type, etc., rolling presses the dough onto the pan so that after baking it will be VERY well stuck. (Whole wheat seems the worst.) However, if after rolling you lift the dough and resettle it, and very lightly oil the pan beforehand, that seems the solution. Maybe a non-stick pan? The other tip is a standard pizza tip: have the dough at room temperature before starting. Among other reasons, it won't be so prone to retracting after you've rolled it out, which means you can roll less and with less pressure. I subtracted a star because it's apparently bamboo, not a harder, more solid wood, like maple. But it's solid enough.I bought the Norpro Deluxe Pastry and Pizza Roller for rolling out homemade focaccia dough and the occasional pan pizza, but I've used it for more than that. Anytime I need to roll out a dough inside a pan, the small rollers allow me to easily roll out corners and edges. The roller is also good for small batches of dough. I mostly use the large head since it isn't really large at all (about 4" long); although the small head is good for getting into hard-to-reach corners, I rarely need anything small than the large head.The wood on the rollers is a little rough because it is unfinished. The metal holding the pins and running down the metal is really solid so that the device never bows, not even under the pressure of rolling elastic bread dough.This is the kind of specialty device that is ideal for a baker. While I wouldn't recommend it for a start-up kitchen (a regular rolling pin will be fine for most jobs), this makes a good addition to the advanced baker's kitchen.-- Debbie Lee WesselmannGreat for my doughs & pastries
